Stir Fried Pork and Lotus Root with XO Sauce

Ingredients

(approx. 160 g) Pork fillet
(approx. 120 g) Lotus root
(approx. 40g) Carrot
(approx. 40g) Celery
2 stalks Spring onion

2 1/2 tbsp XO sauce
Salt -1/4 tsp
1/4 tsp Sugar

Methods

  1. Wash pork. Slice pork by cutting across grain. Add seasonings and marinate for 10 minutes.
  2. Peel lotus root and slice thinly. Slice carrot and celery. Cut spring onion into lengths.
  3. Deep fry pork with warm oil. Drain.
  4. Heat wok. Stir fry lotus root, carrot, celery and spring onion with quick motion. Add seasonings and pork. Stir fry well and serve.
