
Stir Fried Pork and Lotus Root with XO Sauce

| (approx. 120 g) | Lotus root |
| (approx. 40g) | Carrot |
| (approx. 40g) | Celery |
| 2 stalks | Spring onion |

| 2 1/2 tbsp | XO sauce |
| Salt -1/4 tsp | |
| 1/4 tsp | Sugar |
Methods
- Wash pork. Slice pork by cutting across grain. Add seasonings and marinate for 10 minutes.
- Peel lotus root and slice thinly. Slice carrot and celery. Cut spring onion into lengths.
- Deep fry pork with warm oil. Drain.
- Heat wok. Stir fry lotus root, carrot, celery and spring onion with quick motion. Add seasonings and pork. Stir fry well and serve.
