• Taste sensitive development
• Mastery of development technical knowledge
• Product origins and influences on French regional cuisine
• Management and operation of a restaurant
• Intensive application of menus based of classical French gastronomy
• New techniques Sous-vide and slow cooking
• Theoretical courses: crust, bread crumbed, savory cream, spices, marinate, stuff, cheese etc.…..
