Qualifications you will earn

Grand Diploma in French Cuisine, presented by the Institut Disciples Escoffier National qualification in French Pastry, which is accredited by the French government

Course Content

  • Understand recipe + professional bakery definition
  • Organization of production + Hygiene (HACCP)
  • More than 50 different items in fundamental level
  • Different regional shape and bread
  • Learn sourdough bread (creation, refreshment, ph)
  • Explore variations of bread (e.g. gluten-free and hydration bread)
  • Master calculation of production
  • Theory : Flour type, emulsion, Ovo Products, Baker's percentage, proofing, baker guidelines etc.…..

Time: Every Wednesday and Thursday 9am-5:30pm

Option 2
Date: From 5 Jun 2025 to 13 Nov 2025 (Evening time) 
Time: Every Thursday and Friday 6:30pm- 10:30pm and Saturday 9am-5:30pm

  • We will invite examiners from France to oversee the written exam and practical exam for students.
