【第一課】榛果紅莓醬夾心餅及開心果磅蛋糕 Linzer Cookies and Pistachio Pound Cake
教學重點 Highlights: 
香料果仁曲奇麵團打法、曲奇造型技巧、夾餡製作技術、牛油磅蛋糕做法及朱古力淋面技術。 Cookie dough with nutty and spiced flavours, cookie dough shaping skills, filling techniques, pound cake making, and chocolate cake glazing. 
實習 Practice:  香料果仁曲奇麵團製作、曲奇造型及烘焙、牛油磅蛋糕烘焙及自製紅莓果醬。 Cookie dough making, cookie shaping and baking, pound cake baking, and homemade raspberry jam. 
示範Demo:  開心果朱古力淋面技巧及裝飾。Pistachio chocolate cake glazing technique and decoration. 

【第二課】酸種意大利佛卡夏香草番茄包及酸種朱古力布朗尼Sourdough Focaccia and Sourdough Brownies
實習 Practice:酸種意大利佛卡夏香草番茄麵團及酸種朱古力布朗尼Sourdough Focaccia dough and sourdough brownies
示範 Demo:香草蒜油 Garlic herb oil
 
【第三課】綠茶歌劇院蛋糕 Matcha Opera Cake
教學重點 Highlights: 
各種蛋糕製作理論基礎:打發抹茶蛋糕及牛油忌廉、朱古力忌廉刎抹技巧及朱古力薄脆底
實習: 各種蛋糕製作理論基礎:打發抹茶海綿蛋糕及牛油忌廉、朱古力忌廉抹面技巧及朱古力薄脆底製作  Basic cake-making theories: whipping matcha sponge cake and buttercream, chocolate cream coating techniques, and chocolate crunchy base making. 

【第四課】朱古力及糕點 Chocolate and Pastry
教學重點 Highlights:
法式小甜點、朱古力基礎調溫理論及甘納許製作。Petits fours, basic chocolate hand tempering theory, and ganache making
實習 Practice :馬德蓮蛋糕、朱古力松露、馬卡龍及朱古力布朗尼。 Madeleine, chocolate truffles, macarons, and brownies.
