
3-cup Chicken with Swiss Marinade

| 1/2 | dressed chicken |
| 38 g (sliced) | ginger |
| 5 cloves (sliced) | garlic |
| 2 (sectioned) | red chilies |
| 28 g | Thai basil |

| 1/4 cup | rice wine |
| 1/4 cup | Swiss marinade |
| 1/4 cup | sesame oil |
| 1/2 tsp | chicken powder |
| 1/2 tsp | sugar |
| ground white pepper |
Marinade
| 1 tsp | caltrop starch |
| 1 tbsp | cooked oil |
Methods
- Rinse and chop up chicken. Marinade for 15 minutes. Jiggle it slowly in warm oil.
- Heat 2 tbsps oil in a wok. Stir fry sliced garlic, sliced ginger and red chilies until fragrant. Add chicken and stir fry to sear well. Put in seasoning. Simmer over medium heat for about 10 minutes until the sauce thickens slightly. Mix in basil. Simmer for a while. Serve.
Swiss marinade is used instead of regular soy sauce to give an extra depth of herbal flavor and sweetness.
