3-cup Chicken with Swiss Marinade

Ingredients

1/2 dressed chicken
38 g (sliced) ginger
5 cloves (sliced) garlic
2 (sectioned) red chilies
28 g Thai basil

1/4 cup rice wine
1/4 cup Swiss marinade
1/4 cup sesame oil
1/2 tsp chicken powder
1/2 tsp sugar
ground white pepper

Marinade

1 tsp caltrop starch
1 tbsp cooked oil

Methods

  1. Rinse and chop up chicken. Marinade for 15 minutes. Jiggle it slowly in warm oil.
  2. Heat 2 tbsps oil in a wok. Stir fry sliced garlic, sliced ginger and red chilies until fragrant. Add chicken and stir fry to sear well. Put in seasoning. Simmer over medium heat for about 10 minutes until the sauce thickens slightly. Mix in basil. Simmer for a while. Serve.
Swiss marinade is used instead of regular soy sauce to give an extra depth of herbal flavor and sweetness.
