2 cups | Fresh milk |
35 g | Chinese sweet almond |
10 g | Chinese bitter almond |
70 g | Sugar |
5 | Egg white |
Methods
- Rinse the almonds, soak in water for 1 hr, drain and blend with the milk until smooth, strain.
- Dissolve sugar in the almond milk.
- Lightly beat egg white, add to the almond milk, stir well.
- Pour into small bowls and double-boil over medium low heat until set.
