Pork Cubes in Hot Bean Sauce

Ingredients

200 g Pork loin
1 Green pepper
50 g Long runner bean
50 g Bamboo shoot
1 pc Spicy pressed tofu
1 Tbsp Dried shrimp (soaked)
2 Chinese mushroom (soaked)
80 g Cashew nut (deep-fried)
1 tsp Chopped garlic
1-2 tsp Hot bean paste

調味料

1 tsp Light soya sauce
1/2 tsp Cornstarch
each 1 tsp Oil and water

Sauces

1/4 cup Water
1/2 Tbsp Sugar
1/2 Tbsp Light soya sauce
1/2 Tbsp Shaoshing wine
a little Sesame oil and pepper
1 tsp Cornstarch (mixed with water, use later)

Methods

  1. Rinse and wipe dry pork loin, cut into cubes and mix with marinade.
  2. Rinse the rest of the ingredients, cut into cubes.
  3. Heat 3 Tbsp oil, saute pork cubes with chopped garlic, sprinkle wine and then add in the rest of the ingredients together with hot bean paste. Add sauce, cover and simmer for 3 min.
  4. When sauce has reduced, thicken with cornstarch mixture.
  5. Lastly sprinkle in fried cashew nuts and serve, an ideal dish with drinks.
