Layered Pig's Ear in Aspic

Ingredients

6 Pig's ear
10 cups Water

1 cup Dark soya sauce
2 Star anise
2 slices Ginger
2 tsp Salt
200 g Sugar
1 Tbsp Mei Kuei Lu Chiew

Methods

  1. Blanch pig's ears in boiling water for 5 min, drain and brush to clean well.
  2. Bring 10 cups water to the boil, add seasonings, lower pig's ears and bring back to the boil, simmer for 2-3 hr until tender.
  3. Line an oblong tray (8cm x 18cm) with plastic wrap. Arrange pig's ears overlapping one another in the tray and press down with heavy weight.
  4. Chill in fridge, slice to serve.
Blanch pig's ears in boiling water with 1 Tbsp white vinegar helps to whiten them.
