
Banana and Walnut Bread

60g brown sugar | |
60g plain flour | |
50g bread flour | |
1 tsp baking powder | |
1/4 tsp baking soda | |
a pinch of salt | |
1 large egg | |
150g skinned banana | |
30g chopped walnuts | |
1 1/2 tbsp milk | |
1/4 tsp lemon juice | |
1 tbsp olive oil |
Methods
- Preheat oven to 150C. Grease a small loaf tin.
- Whisk egg and sugar until light and fluffy.
- Mash banana, mix with milk, oil and lemon juice. Fold into the egg mixture.
- Sieve flours, salt, baking powder and soda. Fold into the egg mixture. Fold in walnut lastly.
- Pour into the prepared loaf tin. Bake for 30-40 minutes.
