Banana and Walnut Bread

Ingredients

60g brown sugar
60g plain flour
50g bread flour
1 tsp baking powder
1/4 tsp baking soda
a pinch of salt
1 large egg
150g skinned banana
30g chopped walnuts
1 1/2 tbsp milk
1/4 tsp lemon juice
1 tbsp olive oil

Methods

  1. Preheat oven to 150C. Grease a small loaf tin.
  2. Whisk egg and sugar until light and fluffy.
  3. Mash banana, mix with milk, oil and lemon juice. Fold into the egg mixture.
  4. Sieve flours, salt, baking powder and soda. Fold into the egg mixture. Fold in walnut lastly.
  5. Pour into the prepared loaf tin. Bake for 30-40 minutes.
