50g butter | |
70g soft brown sugar | |
1 tablespoon golden syrup | |
75g self raising flour | |
1/4teaspoon bicarbonate soda | |
65g rolled oats | |
75g desiccated coconut | |
1 beaten egg |
Methods
- Melt butter, sugar and golden syrup in a saucepan and heat gently until melted, stirring occasionally.
- Sift flour and bicarbonate of soda into a big bowl, stir in oats, coconut.
- Pour the melted mixture in the bowl and stir well. Add the beaten egg and stir well until mixed.
- Shape a tablespoon of mixture into a ball, place onto a greased baking tray. Give a little press to flatten the cookie.
- Bake in 190-200C oven for 20-25 minutes or until brown. Remove to cool.
