Ingredients

50g butter
70g soft brown sugar
1 tablespoon golden syrup
75g self raising flour
1/4teaspoon bicarbonate soda
65g rolled oats
75g desiccated coconut
1 beaten egg

Methods

  1. Melt butter, sugar and golden syrup in a saucepan and heat gently until melted, stirring occasionally.
  2. Sift flour and bicarbonate of soda into a big bowl, stir in oats, coconut.
  3. Pour the melted mixture in the bowl and stir well. Add the beaten egg and stir well until mixed.
  4. Shape a tablespoon of mixture into a ball, place onto a greased baking tray. Give a little press to flatten the cookie.
  5. Bake in 190-200C oven for 20-25 minutes or until brown. Remove to cool.
