Pumpkin Crystal Cakes (12 nos.)

Ingredients

250g pumpkin
120g wheat starch
2 tbsp potato starch
1 tbsp sugar
120g red bean paste

Methods

  1. Slice the pumpkin and steam fro 8-10 minutes until done, puree.
  2. Add water to make the puree into 1 cup.
  3. Bring the pumpkin puree mixture to the boil, stir in sugar. Remove and stir in the wheat starch and potato starch. Remove and knead until smooth, divide into 12 portions.
  4. Fill each portion with red bean paste, press into a greased crystal mould. Turn out and steam for 5 minutes. Serve hot or cold.
