
Cold Sliced Spicy Pig's Trotter

1 (1kg) | Pig's trotter |
2 slices | Ginger |
2 stalks | Spring onion |
2 Tbsp | Shaoshing wine |
調味料
Chilli garlic vinegar: | |
1 tsp | Chopped garlic |
1 tsp | Chopped chilli |
2 Tbsp | Rice vinegar |
1/8 tsp | Salt |
1/2 tsp | Sugar |
Spicy sauce:
12-13 cups | Water |
3 Tbsp | Coarse salt |
1/2 tsp | Five spice powder |
2 | Star anise |
4 slices | Ginger |
Methods
- Scrap off tiny hair from the trotter, rinse.
- Bring 1/2 wok of water to the boil together with ginger, spring onion and Shaoshing wine, blanch trotter for 10 min, remove and rinse.
- Bring spicy sauce to the boil, add trotter, cover and reboil for 10 min, then simmer for 20 min. Remove from heat and set aside for 8 hr.
- Turn trotter over and bring to the boil, cover and simmer for 25 min. Remove from heat and set aside for 8 hr.
- Remove, rinse and chill in the fridge. Remove bone and slice meat thinly. Serve with chilli garlic vinegar as a dip.
