Elementary Certificate Training Course in Chinese Cuisine For Housemaids
為滿足各位對美食、均衡飲食及健康的追求,煤氣烹飪中心特別舉辦「家庭傭工烹飪班- 初級中菜證書課程」。課程包括五日實習訓練及一日綜合考試,教授多款家庭日常菜式,歡迎家傭或一家之「煮」報讀!
課程內容:
• 廚房衛生及安全
• 掌握基本中菜烹調方法及變化
• 認識不同食材及調味料 (肉類、海鮮、蔬菜等)
• 如何選購及預備各類食材
• 共教授20款家常及宴客菜式,當中有12款實習菜式,可帶回家中品嚐
• 如何安全使用各種廚房用具

This “6-day Elementary Certificate Training Course For Housemaids (Chinese Cuisine)” includes 5 days of practice training and a round-up examination during the 6th lesson.
This course covers:
• Kitchen safety and hygiene
• Basic Chinese cooking methods and their variations
• Knowledge of various ingredients and seasoning
• How to choose and prepare different kinds of ingredients (meat, poultry, seafood, vegetables, etc.
• 20 popular family recipes with 12 practice dishes. Cooked dishes are to be brought home to share.
• How to safely use various kitchen utensils

第一課 First lesson: 廚房安全守則及清蒸菜式Kitchen Safety and Steaming Dishes
實習Practice:馬蹄冬菇蒸肉餅 Steamed Meat Cake with Waterchestnut and Chinese Mushroom、老少平安 Steamed Dace Fish Patty with Tofu
示範 Demo:肉茸扒蒸蛋 Steamed Custard with Meat Sauce、薑葱蒸魚 Steamed Fish with Ginger and Spring Onion
第二課 Second lesson: 粥粉麵飯 Congee, Soup Noodles, Fried Noodles and Fried Rice
實習Practice:生炒雞絲飯 Stir-fried Rice with Shredded Chicken、雜錦炒烏冬 Assorted Meat with Japanese “Wu-Dung”
示範Demo:瑤柱白粥 Chinese Congee with Dry Conpoy、雪菜肉碎湯米 Soup Vermicelli with Preserved Vegetable and Minced Pork
第三課 Third lesson:小炒菜式及中式老火湯 Stir Frying Dishes and Chinese Long Boiled Soup
實習 Practice:豉椒味菜炒鮮魷 Stir-fried Squid with Pickled Mustard in Black Bean Sauce、西蘭花蠔油牛肉 Stir-fried Beef Fillet in Oyster Sauce with Broccoli
示範 Demo:腰果栗子粟米湯(素湯)Corn Soup with Cashew Nuts and Chestnuts (Vegetarian Soup)、蟲草花紅蘿蔔粟米排骨湯 Cordycep Flower with Carrot Corn and Spare Rib Soup
第四課 Fourth lesson: 香煎菜式及中式糖水 Shallow Frying Dishes and Chinese Dessert
實習 Practice:鮮茄汁蝦 Prawns with Fresh Tomato Sauce、中式牛柳 Chinese Style Steak
示範 Demo:椰汁紫米露 Black Glutinous Rice Sweet Soup with Coconut Milk
第五課 Fifth lesson: 炆炸菜式及素菜 Braising, Deep Frying Dishes and Vegetarian Dish
實習 Practice:金針雲耳紅棗炆雞 Stewed Chicken with Tiger Lily and Red Dates、粟米魚塊 Fried Fish with Sweet Corn Sauce
示範 Demo:南乳炆粗齋 Vegetable Supreme with Preserved Red Curd Sauce
第六課 Sixth lesson + 考試 Exam:
實習 Practice:中式豬扒 Pork Chop with Chinese Sauce、西蘭花韭黃炒魚塊 Stir-fried Fish Fillet with Yellow Chives
示範 Demo:番茄雕花點綴 Tomato Carving as Food Garnishes、食物上碟要訣:餐具、顏色、點綴或裝飾配搭等等Principle of Serving Dishes:Serving Utensils, Colouring, Decoration and Garnishes etc.
課堂以粵語及英語教授
Classes will be conducted in Cantonese and English
