-量秤/塑型/入模/烘焗方法Weighing/ Shaping/ Molding/ Baking  
-各種麵粉及特性Flour and its properties 
-混合麵包、黑麥麵包Méteil, Rye bread
-疊層麵團 Laminate dough 
-牛角包和丹麥麵團 Croissant & Danish dough

烘焙實習 Practice:
-白麵包(法國長棍麵包 / 圓包)White Bread (Baguette / Boulle)
-鄉村麵包(波爾多圈、奧文尼亞鄉村包)Country Bread (Couronne Bordelaise,
Tabatière, Auvergnat)
-牛奶麵包( 麻花包)Milk Bread (Navettes / Tresse)
-傳統法國麵包 Tradition Bread (Baguette)
-佛卡夏 Focaccia
-全麥麵包 Wholemeal bread
-酸種麵包 Sourdough
