Ingredients

3 whole (save water for later) Conpoy (soaked in 1/2 cup of water)
4 pcs Dried mushrooms (soaked and diced)
8 whole Dried prawns (soaked)
2 whole cloves Shallots/dried red onion (sliced)
1 pc Dried pork sausage (blanched with boiling water and sliced)
1 pc Dried duck liver sausage (blanched with boiling water and sliced)
1 slice Yunnan ham (rinsed with boiling water and shredded)
4 cups Sticky rice
1 cup Chicken stock
2 cups Water
1/2 cup Conpoy water (from above)
3 Tbsp Cooking oil
1 stalk Spring onion (chopped)

Methods

  1. Heat oil in a clay pot, fry shallots, mushroom, dried prawns and sausages and reserve for later.
  2. Put rice, stock, conpoy, water and conpoy water.
  3. When water has almost disappeared (about 8 minutes), add shallots, mushrooms, dried prawn, sausages and yunnan ham, cook until rice is done.
  4. Keep rice covered for 5 more minutes. Sprinkle with spring onion and seasoning.
