3 whole (save water for later) | Conpoy (soaked in 1/2 cup of water) |
4 pcs | Dried mushrooms (soaked and diced) |
8 whole | Dried prawns (soaked) |
2 whole cloves | Shallots/dried red onion (sliced) |
1 pc | Dried pork sausage (blanched with boiling water and sliced) |
1 pc | Dried duck liver sausage (blanched with boiling water and sliced) |
1 slice | Yunnan ham (rinsed with boiling water and shredded) |
4 cups | Sticky rice |
1 cup | Chicken stock |
2 cups | Water |
1/2 cup | Conpoy water (from above) |
3 Tbsp | Cooking oil |
1 stalk | Spring onion (chopped) |
調味料
to taste | Light and Dark soya sauce |
Methods
- Heat oil in a clay pot, fry shallots, mushroom, dried prawns and sausages and reserve for later.
- Put rice, stock, conpoy, water and conpoy water.
- When water has almost disappeared (about 8 minutes), add shallots, mushrooms, dried prawn, sausages and yunnan ham, cook until rice is done.
- Keep rice covered for 5 more minutes. Sprinkle with spring onion and seasoning.
