Steamed Curry Fish in Banana Leaves


Pomfret or other fish1 (approx 300 g)
Red Curry paste1 Tbsp
Lemongrass1 stalk
Thai red chilli2
Shallot1 clove
Fish sauce1 Tbsp
Sugar1 Tbsp
Banana leaf1
Lime juice1 Tbsp


1Clean pomfret, cut into thick pieces, season with 1/2 tsp salt.
2Chop lemongrass, Thai red chilli and shallot finely.
3Heat 3 Tbsp oil in a pan, saute chopped ingredients until fragrant. Add red curry paste and saute for a while until thick, season with fish sauce and sugar. Cool well for use.
4Arrange pomfret on the banana leaf, top with curry sauce and lime juice. Fold into a parcel and steam over high heat for 10 min. Serve hot.
