Fluffy Blueberries Pancakes


50 grams fresh or frozen blueberries
150 grams all purpose flour
1/2 teaspoon salt
1 tbsp baking powder
1 tbsp sugar
Approx. 200 ml milk
1 egg, beaten
Butter for frying


11. Sift all dry ingredients together into a mixing bowl.
22. Beat the egg and mix with the dry ingredients. Stir in enough milk to make a thick batter.
33. Leave the pancake batter to rest for 1 hour.
44. Just before cooking, stir in the frozen blueberries.
55. Heat a non-stick frying pan and brush with a little melted butter. Put 1 ladle of batter into the pan. Fry over low heat
6until golden brown on one side, then flip to the other side and fry until golden brown too.
76. Serve the pancakes hot with maple syrup or golden syrup.
