Fluffy Blueberries Pancakes

Ingredients
50 grams fresh or frozen blueberries |

150 grams all purpose flour |

1/2 teaspoon salt |

1 tbsp baking powder |
---|
1 tbsp sugar |
---|
Approx. 200 ml milk |

1 egg, beaten |

Butter for frying |

Method
1 | 1. Sift all dry ingredients together into a mixing bowl. |

2 | 2. Beat the egg and mix with the dry ingredients. Stir in enough milk to make a thick batter. |

3 | 3. Leave the pancake batter to rest for 1 hour. |

4 | 4. Just before cooking, stir in the frozen blueberries. |

5 | 5. Heat a non-stick frying pan and brush with a little melted butter. Put 1 ladle of batter into the pan. Fry over low heat |

6 | until golden brown on one side, then flip to the other side and fry until golden brown too. |

7 | 6. Serve the pancakes hot with maple syrup or golden syrup. |
