Butter Cake with Raisins and Rum Sauce


Flour 200 g
Butter (soft) 200 g
Sugar 200 g
Egg 2 nos.
Rum -100 ml
Brown sugar 100 g
Raisins100 g
Lemon (rind & juice)1 no.
Cornstarch 1 tbsp.


1Sieve the flour into a bowl. Add butter, sugar and eggs. Beat well until a soft dough formed.
2Grease and line a 20 cm diameter cake tin with paper. Press the dough onto the cake tin. Bake at 180? for 20 minutes.
3Lower the temperature to 160? and bake for further 20-25 minutes.
4Boil Rum, brown sugar and raisins in a saucepan.
5Add lemon rind.
6Blend lemon juice and cornstarch together. Add Rum mixture and cook until thickened.
7Cut the cake and serve with Rum sauce.
