Broiled Lamb Chops with Goat Cheese

6 pieces lamb chops
1/2 teaspoon dried thyme
1/2 teaspoon oregano
6 tablespoons soft goat cheese at room temperature

Herb Pesto:

1 cup packed mint leaves
2 stalks fresh Italian parsley
2 green onions, chopped
2 cloves garlic, chopped
50 grams pine nuts
Grated zest of 1 lemon
Approx. 100 ml extra virgin olive oil
Salt & black pepper to taste


1Mix goat cheese with dried thyme and oregano.
2Season lamb chops with salt and pepper, pan-fry until brown on the outside.
3Spoon the goat cheese mix on the lamb chops and press down. Grill until the cheese is brown.
4To make herb pesto, put all ingredients in a food processor. While the machine is running, add olive oil in a thin slow stream and process all ingredients into a paste. Check seasoning and serve with the broiled lamb chops.
