Banana and Walnut Bread


60g brown sugar
60g plain flour
50g bread flour
1 tsp baking powder
1/4 tsp baking soda
a pinch of salt
1 large egg
150g skinned banana
30g chopped walnuts
1 1/2 tbsp milk
1 tbsp olive oil


1Preheat oven to 190oC. Grease a small loaf tin.
2Whisk egg and sugar until light and fluffy.
3Mash banana, mix with milk, oil. Fold into the egg mixture.
4Sieve flours, salt, baking powder and soda. Fold into the egg mixture. Fold in walnut lastly.
5Pour into the prepared loaf tin. Bake for 30-40 minutes.
