The Art of Italian Antipasto
Antipasto is an appetizer and its colourful offerings mark the beginning of a scrumptious meal. Italians tend to have late dinner at 9:00 p.m. By this time, one could not help but feel the urge of hunger. Therefore, in order to make sure that the plate can arrive at the table in no time, choose items that can be prepared ahead and be plated immediately when it's time to serve.
After all, antipasto is an appetizer and its main purpose is to stimulate your diners' appetite. Avoid serving huge portions and pay attention to the combination. You don't really want your guests to become too full for the following courses.
