Min (Fujian) is one of the eight great regional cuisines of China offering a lightness of taste in comparsion to other styles; often there is a mixed of sweet and sour flavours. What makes Fujian cooking so special are fine choice of ingredients, careful mastery of knives and flame and a blend of unique flavours. In May, TCC was proud to have Chef Shao from Xiamen demonstrate three traditional Fujian dishes – Hollow Eel, Rebirth of Qilin and Quahog in Chicken Broth. |
